    Add the lentils and amaranth to a saucepan and cover with water. 2. Bring to a boil, then reduce heat and simmer for about 15 minutes until tender. Drain any excess water and allow to cool slightly. 3. Transfer the lentil-amaranth mixture to a large bowl. 4. Add onion, parsley, nutritional yeast, breadcrumbs, psyllium husk, olives if using, salt, and pepper. Mix thoroughly. 5. If the mixture feels too wet, add additional breadcrumbs 1 tablespoon at a time. 6. Form into 8–10 patties. 7. Heat oil in a large skillet over medium heat. 8. Cook patties for about 3–4 minutes per side until golden brown and crisp. 9. Alternatively, bake at 400°F (200°C) for 25–30 minutes, flipping halfway through. 10. Serve warm in burgers, grain bowls, salads, or wraps.
