Baby Potatoes Recipe
Boiled baby potatoes tossed in a creamy cashew-leek sauce with melty vegan cheese.

01Boil the potatoes in salted water until fork-tender, about 15 minutes, then drain. 2. Saute the leek in oil 2-3 minutes, then add the garlic for a minute over medium-low heat. 3. Add the cashew butter and water, mix, and stir in all the spices, adding more water if needed. 4. Add the cooked potatoes and scallions and stir thoroughly. 5. Add the grated vegan cheese and a splash of water, cover, and cook over low-medium heat until melty. 6. Garnish with fresh parsley.
