Lentil Brownies

Fudgy chocolate brownies made with cooked red lentils and nut butter.

    Line a brownie pan with parchment paper and preheat the oven to 350 degrees F. 2. Rinse the lentils and cook in 1.5 cups water over medium heat 12-13 minutes; drain and add to a food processor. 3. Heat the maple syrup and oil in a skillet, add the chocolate and sugar, and stir off the heat until melted. 4. Add the melted chocolate and remaining ingredients except the topping chocolate chips to the food processor and blend into a smooth batter. 5. Pour into the pan, mix in some chocolate chips, and sprinkle more on top. 6. Bake 32-35 minutes; check the center with a toothpick. 7. Cool 15 minutes before slicing.
