Vegan Banana Pudding (Dessert)

    In a medium saucepan, combine all pudding ingredients except the vanilla extract and whisk until the cornstarch dissolves, then bring the mixture to a boil over medium heat, whisking frequently. 2. Once boiling, turn the heat to low and whisk continuously for about 2 minutes until the pudding is thick and creamy; remove from heat, stir in the vanilla extract, cover with plastic wrap, and cool for 10-15 minutes. 3. Meanwhile, slice the bananas and whip up the vegan whipped cream. 4. In a jar, add 1-2 tablespoons of pudding, then a layer of whipped cream, a few vanilla wafers, and a layer of sliced bananas; repeat once more. 5. Garnish with a dollop of whipped cream, banana slices, and wafer crumbles; enjoy immediately or refrigerate for a few hours.
