Vegan Oatmeal Cookies

Simple oat and peanut butter cookies with optional toppings.

    Grind the oats and flax seeds in a coffee or spice grinder until floury. 2. Mix with the remaining ingredients in a medium bowl until a smooth dough forms, adding water a teaspoon at a time if too dry. 3. Divide the dough into 9 small balls, flatten into cookie shapes, and place on a parchment-lined baking sheet; preheat the oven to 350 degrees F (175 degrees C). 4. Add toppings of choice and bake 8-10 minutes until lightly golden around the edges. 5. Cool briefly before serving.
