Vegan Pumpkin Bread (Dessert or Snack)

    Preheat the oven to 360 degrees F (180 degrees C) and line an 8-inch loaf pan with parchment paper. 2. Mix all dry ingredients except the chocolate chips in a bowl. 3. Add all wet ingredients and stir until just combined; do not overmix. 4. Stir in the chocolate chips. 5. Pour the batter into the pan and top with more chocolate chips. 6. Bake 35-40 minutes until a toothpick inserted in the center comes out dry or slightly crumbly. 7. Cool completely before slicing.
