  • 3 whole โ€” medium sweet potatoes, peeled and cut into ½-inch cubes • 1 medium red onion, sliced • 4 garlic cloves, unpeeled • 1 tsp vegetable oil • 1 tsp ground cumin • 1/2 tsp sweet paprika • 1/4 tsp salt • Pinch of black pepper

  • 1 whole โ€” Juice of 1 lemon • 6 fresh mint leaves, finely sliced • 1 tbsp extra-virgin olive oil • 1 tbsp apple cider vinegar • 1 tbsp maple syrup • 1/2 tsp onion powder • 1/4 tsp salt

  • 4 cups โ€” kale, stems removed and chopped • 1 tbsp extra-virgin olive oil • 1 1/2 cups cooked chickpeas, rinsed and drained • 1 avocado, diced • 1/4 cup roasted unsalted almonds, chopped
