Ingredients (for 4 servings)

โ olive oil • 1 medium onion, diced • 3–4 garlic cloves, minced • 1 bell pepper, diced • 1 medium carrot, finely chopped • 1 tsp cumin powder • 1 tsp smoked paprika • 1 tsp oregano • 1/2 tsp salt, or to taste • 1 cup quinoa, rinsed • 1 can black beans, drained and rinsed • 1 cup corn (fresh, frozen, or canned) • 1 can diced tomatoes • 2 cups vegetable broth or water • 1–2 tbsp tomato paste (optional, for depth) • 1 lime, juiced • Fresh cilantro, for garnish • Avocado, for serving
