  • 2 whole โ€” medium eggplants, cut into bite-sized cubes or wedges • 1 tbsp neutral oil
  • 1 whole โ€” Miso Maple Glaze
  • 2 tbsp โ€” white miso paste • 1 tbsp maple syrup • 1 tbsp soy sauce or tamari • 1 tbsp rice vinegar • 1 tsp sesame oil • 1 garlic clove, minced • 1 tsp fresh ginger, grated • 1 to 2 tbsp water, as needed

  • 2 whole โ€” green onions, sliced • 1 tbsp sesame seeds
