If using bulgur, rinse and soak it in lemon juice for 10–15 minutes until softened.

Ingredients (for 4 servings)

  • 1 whole โ€” Salad
  • 2 bunches โ€” fresh flat-leaf parsley, very finely chopped • 1/2 cup fresh mint, finely chopped • 2 medium tomatoes, finely diced • 3 green onions, finely sliced • 1/4 cup fine bulgur wheat (optional but traditional) • 1/2 cucumber, finely diced (optional variation)
  • 1 whole โ€” Dressing
  • ¼ cup โ€” fresh lemon juice • 1/4 cup extra virgin olive oil • 1/2 tsp salt, or to taste • 1/4 tsp black pepper
