Add all ingredients to a large stockpot.

Ingredients (for 6 servings)

  • 6 cups โ€” boiling water • 2 medium onions, roughly chopped • 4 garlic cloves, halved • 2 medium carrots, thickly sliced • 2 celery ribs, thickly sliced • 4 cups mixed vegetable scraps (see Notes) • 1/2 cup fresh parsley • 1/2 cup fresh cilantro • 2 bay leaves • 1/2 tbsp whole black peppercorns • 1 tsp salt, plus more to taste
