In a large bowl, combine chickpeas, mandarin segments, cucumber, bell pepper, red onion, cilantro, and greens.

  • 1 can โ€” chickpeas, drained and rinsed • 2 mandarin oranges, peeled and segmented • 1 cup cucumber, diced • 1/2 cup red bell pepper, diced • 1/4 cup red onion, finely sliced • 1/4 cup fresh cilantro, chopped • 1/4 cup toasted almonds or walnuts • 2 cups mixed greens or spinach
  • 1 whole โ€” Citrus Dressing
  • 3 tbsp โ€” olive oil • 2 tbsp orange juice (fresh or from mandarins) • 1 tbsp lemon or lime juice • 1 tbsp maple syrup or honey • 1 tsp Dijon mustard • 1/2 tsp salt • 1/4 tsp black pepper
