Heat olive oil in a large pot over medium heat.

Ingredients (for 4 servings)

  • 1 tbsp โ€” olive oil • 1 medium onion, diced • 3 garlic cloves, minced • 1 tsp ground cumin • 1 tsp ground coriander • 1/2 tsp turmeric • 1/2 tsp salt, plus more to taste • 5–6 medium carrots, chopped • 3/4 cup red lentils, rinsed • 4 cups vegetable broth (or water + bouillon) • 1 tbsp tomato paste • 1/2 tsp black pepper • Juice of 1/2 lemon
  • 1 whole โ€” Gremolata Topping
  • ½ cup โ€” fresh parsley, finely chopped • 1–2 garlic cloves, finely minced • Zest of 1 lemon • 1–2 tbsp olive oil • Pinch of salt
