Butternut Squash & Spinach Lasagna

Preheat oven to 400°F (200°C).

  • 1 whole โ€” medium butternut squash • 1 tbsp olive oil • 1/2 tsp salt • 1/4 tsp black pepper • 1/4 tsp nutmeg

  • 1 tbsp โ€” olive oil • 1 medium onion, finely chopped • 3 garlic cloves, minced • 6–8 cups fresh spinach , chopped • Pinch of salt and pepper
  • 1 whole โ€” White Sauce (Béchamel-Style)
  • 3 tbsp โ€” olive oil or vegan butter • 3 tbsp all-purpose flour • 3 cups unsweetened plant milk • 2 tbsp nutritional yeast (optional, for depth) • 1/2 tsp salt, or to taste • 1/4 tsp black pepper • 1/4 tsp garlic powder

  • whole โ€” lasagna noodles (regular or no-boil) • 1/2 cup vegan parmesan or nutritional yeast (optional topping)
