Add brown rice, water, and vegetable bouillon cube to a pot.

  • 1 cup โ€” brown rice (soaked overnight if possible) • 2 1/4 cups water • 1 vegetable bouillon cube
  • 1 whole โ€” Dressing
  • ½ whole โ€” lime, juiced • 1 tbsp olive oil • 2 tsp miso paste • 1 tsp fresh ginger, grated • 1 tsp toasted sesame oil • 1 tsp reduced-sodium soy sauce • 1 tsp rice vinegar • 1/2 tsp onion powder • Pinch of black pepper

  • 3½ oz โ€” sugar snap peas, halved • 2 medium bell peppers, diced • 1/2 small red onion, finely minced
  • 1 whole โ€” Optional Toppings
