Beetroot Quinoa Salad with Orange Ginger Dressing

Add quinoa and vegetable broth to a small pot.

Ingredients (for 4 servings)

  • 1 whole โ€” Salad
  • ½ cup โ€” quinoa, rinsed • 1 cup vegetable broth • 1 1/2 cups cooked chickpeas, rinsed and drained • 3 cups arugula • 2 cooked beets, peeled and chopped • 1 orange, peeled and sliced into thin rounds
  • 1 whole โ€” Orange Ginger Dressing
  • 1½ whole โ€” oranges, juiced and zested • 2 garlic cloves, crushed • 1/4 cup tahini • 2 tsp fresh ginger, grated • Pinch of black pepper
