Jicama Slaw

Peel the jicama and carrots, then finely shred them along with the red cabbage.

Ingredients (for 8 servings)

  • 1 whole โ€” large jicama , peeled and finely shredded
  • ½ whole โ€” head of red cabbage, finely shredded
  • 2 whole โ€” carrots, peeled and shredded
  • 1 whole โ€” large red bell pepper, thinly sliced
  • ½ whole โ€” white onion, thinly sliced
  • ½ cup โ€” olive oil
  • ¼ cup โ€” rice vinegar
  • ¼ cup โ€” lime juice (freshly squeezed)
  • 2 tbsp โ€” honey
  • ½ tsp โ€” chili powder
  • 1 tsp โ€” kosher salt
  • ½ tsp โ€” ground pepper
  • ¼ cup โ€” cilantro leaves, finely chopped
