Sweet and Sour Artichoke Salad

Peel the outer leaves from the artichokes and cut them into quarters.

Ingredients (for 4 servings)

  • 6 whole โ€” small globe artichokes
  • 1 whole โ€” Juice of 1 lemon
  • 2 tbsp โ€” olive oil
  • 2 whole โ€” medium onions, roughly chopped
  • 1 cup โ€” fresh or frozen broad beans
  • ½ cup โ€” fresh or frozen peas
  • 1 whole โ€” freshly ground black pepper
  • 1 whole โ€” fresh mint leaves, to garnish
  • 1 whole โ€” For the salsa agrodolce
  • 2 cups โ€” white wine vinegar
  • 1 tbsp โ€” coconut sugar
  • 1 handful โ€” fresh mint leaves, roughly torn
