Place quinoa in a fine-mesh strainer and rinse under cold water for 30-60 seconds, rubbing the grains gently with your hands.

Ingredients (for 4 servings)

  • 1 whole โ€” bay leaf
  • 1 tsp โ€” cumin seeds
  • 3 whole โ€” green cardamom pods
  • 1 whole โ€” 4 cloves
  • 1 inch โ€” cinnamon stick
  • 6 whole โ€” black peppercorns
  • 1 whole โ€” green chili pepper, diced
  • 1 cup โ€” onion, diced
  • 4 cloves โ€” garlic, minced

  • 2 cups โ€” mixed vegetables
  • 1 cup โ€” quinoa, rinsed
  • 1¼ cup โ€” water
  • ½ whole โ€” lemon, juiced
  • ¼ cup โ€” cilantro, chopped (for garnish)
