Green Lentil Crepe with Spinach

If using dried lentils, soak them in room-temperature water overnight or for at least 4 hours.

Ingredients (for 6 servings)

  • 1 cup โ€” dried Green Split Peas (soaked overnight) or 15 oz can
  • ¼ cup โ€” onion, finely chopped
  • 1 cup โ€” fresh spinach, finely chopped
  • ¼ cup โ€” cilantro leaves, finely chopped
  • ½ tsp โ€” or 1/2-inch fresh ginger, finely chopped
  • ¼ tsp โ€” turmeric powder
  • ¼ tsp โ€” chili powder or cayenne pepper
  • ½ tsp โ€” carom seeds
  • ¼ tsp โ€” salt, or to taste
  • cup โ€” water
  • 1 tbsp โ€” olive oil
  • 1 tbsp โ€” flaxseed powder
