  • 1 tbsp โ€” olive oil • 1 small onion, finely diced • 3 garlic cloves, minced • 16 oz mushrooms, sliced (cremini, button, or mixed mushrooms) • 1 tsp fresh rosemary, finely chopped • 1 tsp fresh thyme leaves • 1 tbsp soy sauce or tamari • 1 tbsp all-purpose flour • 1 cup vegetable broth • 1/2 cup unsweetened plant-based cream or cashew cream • 1/2 tsp salt, or to taste • 1/4 tsp black pepper • 1 tbsp fresh parsley, chopped, for garnish
