In a large pot or Dutch oven combine the first seven ingredients (through Japanese Togarashi spice blend) and 6 cups water.

Ingredients (for 6 servings)

  • 4 whole โ€” scallions
  • 2 tbsp โ€” brown rice vinegar
  • 1½ tsp โ€” Ginger
  • 2 clove โ€” Garlic
  • 2 tsp โ€” kelp granules
  • 2 pinch โ€” Japanese togarashi spice blend
  • 5 oz โ€” soba or udon noodles
  • 1 whole โ€” carrot
  • 1 whole โ€” Bell Peppers
  • 1 cup โ€” snow peas
  • 7 oz โ€” firm tofu
  • 1 tbsp โ€” miso paste
  • ¼ cup โ€” Cilantro
  • ½ whole โ€” nori sheet
